New Brewery: The World's First Devoted To Grapes And Oenobeers

After peanut butter porter, lemongrass wheat and a long list of other unique flavor concoctions, it’s difficult to be surprised with anything new in the craft beer world. A new brewery just opened in Colorado, though, that may be one of a kind.
Liberati Osteria & Oenobeers, which opened in Denver Oct. 29, believes it is the world’s first brewery solely dedicated to “oenobeers.” Oenology is the science and study of wine and winemaking, and oenobeer, according to brewer Alex Liberati, is a beer with up to 49% of the fermentable sugars coming from grapes or a grape product.
“My brewing process is a blend of techniques from the world of wine-making and the world of brewing,” says Alex Liberati, who was born and raised in Rome, Italy, and moved to Colorado two years ago to establish the brewery and restaurant. “To do so, I needed to create a unique brewery setup — a mixture of equipment from the two worlds that works harmoniously.”


The brewery is presently offering nine different oenobeers which are made with grapes, must and juice, “along with all the other ingredients that you would find in beer,” Liberati says.
“I’ve been very lucky to discover Colorado,” he says. “It's a state that I have quickly come to love with the same strength I love my hometown of Rome, but, at the same time it's a perfect setting for my work. People are interested in tasting and experiencing new things here. They are open-minded, and they seek authenticity. And, along with great people here, the demographics are splendid, and the growth of the city is just happening now. It’s a perfect environment for my first steps here in the States.”
